A rare offering of older beef from Matt and Laura Elliot.  This 11 and a half year old Hereford cow has been reared her whole life on 100% pasture diet, certified by PFL.

Meat from cull cows is much sought after due to its enhanced flavour, depth, texture and nutrient density as well as rare availability. Grass fed cows develop deep yellow fat with age, which melts into the meat when cooked, to yield a silky, melt in the mouth texture and incredible flavour. To get the most from mature beef, as with mutton and meat from mature animals, the joints need to be cooked low and slow. Ideally simmered in the slow cooker for around 8hours.

When properly cooked, these meats are incomparably more delicious than meat from younger animals. Sirloin and Fillet steaks can still be cooked quickly and served rare if desired – though you should expect them to be slightly firmer than steaks from younger animals, due to the higher muscle fibre density in older animals.

The cuts (please note this can vary):

  • 1.2kg roast (Topside, Silverside or Top Rump)
  • 1kg slow roast (Brisket, Chuck or Short Ribs)
  • 2 x 500g packs casserole beef (stew or shin)
  • 2 packs of steaks.  Each pack has 2 x 250g steaks (generally Sirloin and Rump but some with Rib eye and Bavette)
  • 3 x 500g packs of minced beef
  • some stock bones

About the farm:

The Sandy Hill mob is run by Matt and Laura Elliott, a first-generation farming family, tenants of the National Trust on the Sherborne and Lodge Park estate in Gloucestershire. They are farming using nature friendly, agro-ecological techniques (entirely without any artificial inputs) which includes moving their animals regularly – mob-grazing and bale-grazing. They aim is to increase biodiversity across the whole farm, while at the same time improving soil health and the health of their livestock.  The whole suckler herd of pedigree Hereford cattle live outside all year round in a family group (several generations running together). The cattle are 100% grass fed, Pasture For Life certified – they enjoy a varied diet of grasses, herbs and wildflowers all year round.

The Cull cow in this box was 11 and a half years old, a Pedigree Hereford, and Pasture for Life certified for her entire life.
