Delicious succulent chicken as it used to be.  These slow growing birds have been raised for 16-17 weeks and have benefitted from a soya free and pasture rich diet, alongside the insects and grubs from the pasture.  The high levels of beta-carotene in the diet from the pasture are shown in the colour of the meat and skin. Rich golden colours, with incredible flavour and succulence.

Description

Amy Chapple describes the system her parents Mark and Pauline use for farming pasture raised soya free chicken:

‘All of our chicks arrive as day olds, allowing us complete control over their feed. They’re fed a 100% soy-free diet, with the large majority of feed ingredients being grown less than 10 miles away! Our chicks head out to the pasture at 2-4 weeks old, depending on the weather conditions and time of year.’

Fresh pasture rotation with access to cattle dung and insects has enabled the birds to thrive without the need for supplemental soya. This has also paved the way for sourcing the majority of their feed inputs locally, building a more resilient farming system overall.

Chickens originated from jungle fowl, so they naturally feel safer when scratching the soil beneath a protective canopy. This reduces their need to be vigilant to predators so reduces their stress levels. Amy is mimicking this canopy by raising the soya free chickens in covered areas. This makes the chickens feel safer and calmer than they would in open pasture.

Amy uses a slowing growing breed of chicken, known as the Hubbard 757.

The farm are attempting to mimic the processes that would take place in natural grassland systems. They do this through managing the movement of the birds to follow the cows just as large flocks of birds follow behind ruminant species in the wild.

The enrichment of the pasture with soya free chicken dung contributes to the fertility of the soil, enhancing the nutrient profile available to support the ecosystem.
