Description
Organic grass fed mutton shoulder on the bone is an outstanding cut when cooked slowly at a low temperature. The natural connective tissue and fats baste the meat from the inside which creates a delicious rich flavour. Our mutton shoulder on the bone also works well being cooked in strong flavours such as wine, garlic and rosemary.
The 500g portions can be cooked slowly in mint sauce and Cumberland sauce to create the classic ‘minted lamb henry’.
Although this cut is higher in fat, fat from animals on 100% grass diets are healthier than those from grain fed animals.
Our mutton is certified both organic and 100% pasture fed meaning they haven’t received any grains. Meat from 100% grass fed animals is known to be higher in a range of minerals and vitamins. It’s also richer in anti-oxidants than grain fed meat.
Mutton is sheep meat from animals that are over two years old. Good mutton is difficult to find as it is often taken from old ewes at the end of their productive life. This means it’s often intensively fattened on cereals to ‘make the grade’. Our mutton is fattened entirely on pasture and raised on an organic system. This guarantees the animal has had a natural life grazing in fields and haven’t been exposed to chemicals or antibiotics. The fat on grass fed animals is higher in unsaturated fats and rich in omega-3. This means it will melt away through cooking much better than any grain fed alternative. It’s also better for your health. Our mutton is dry aged on the bone for the optimal period to further intensify flavours and tenderises the meat.
