Recipe:
Serves 2-4
Ingredients:
- 1 chicken carcass
- ~200g Chicken wings
- 1-2 chicken necks
- Chicken offal (heart and liver)
- 2 medium leeks
- 1 stick of celery
- 2 large carrots
- 1 red onion
- 2-3 cloves garlic
- Large knob of butter
- Teaspoon dried mixed herbs
- Bay leaves
- Sea salt
- Black pepper
Instructions
- Finely chop the onion, garlic, leeks and celery, add them to a large pan, with the knob of butter and heat on medium-high until beginning to brown.
- Chop the carrots into big chunks and add to the pan, with some salt, stir until beginning to brown.
- Add the wings and stir until beginning to brown
- Add the carcass, offal and chicken necks and fill the pan with water until all of the contents are submerged.
- Add the teaspoon of mixed herbs, black pepper and any other seasoning
- Bring to the boil and then reduce to a simmer for 4-6 hours (preferably 6).
- To serve – Pass through a sieve and collect the liquid broth
- Serve the broth as a nourishing drink in itself or use as a stock for flavouring other meals/making gravy/sauces.
