Organic grass fed lamb shoulder on the bone is an outstanding cut when cooked slowly at a low temperature. The natural connective tissue and fats baste the meat from the inside which creates a delicious rich flavour. Our lamb shoulder on the bone also works well being cooked in strong flavours such as wine, garlic and rosemary.
The 500g portions can be cooked slowly in mint sauce and Cumberland sauce to create the classic ‘minted lamb henry’.
Although this cut is higher in fat, fat from animals on 100% grass diets are healthier than those from grain fed animals.
Our organic grass fed lamb comes from a collection of farms that manage their land holistically. They don’t use any fertilisers or pesticides. Careful holistic management promotes a wealth of biodiversity and maintains healthy soils that sequester carbon from the atmosphere. When soils are nourished and deep, they are full of essential minerals and vitamins. These healthy soils hold water better making them more resistant to drought and even help prevent flooding.
Our farms are pro-active in their livestock management techniques. These techniques matched with a nourishing pasture-based diet prevents the need for routine medicines and antibiotic’s.
The ewes and lambs live on a 100% pasture diet, they never receive any grains. They are both ‘Pasture for life’ and ‘Organic’ certified.
